Downtown Olympia’s coffee scene is about to get a fresh jolt with the arrival of Papaver Roaster House, a new café and micro-roastery opening its doors at 500 Columbia St. NW. Slated for a soft opening on June 6, this upcoming spot promises more than just your average cup of joe.

🫘 What to Expect

Papaver Roaster House is focusing on high-end, single-origin beans, roasted and brewed on-site. Whether you like your coffee hot, cold, or whole-bean to-go, this shop is dialing in a premium experience for true coffee lovers.

Customers will also be able to grind beans on-site and eventually pick up bags of whole bean roasts to brew at home.

🥐 The Bakery Is Coming Too

Just weeks after the soft opening, Papaver’s in-house bakery will follow — bringing a blend of French pastries and Ukrainian-inspired baked goods to the menu. Expect a cozy rotation of buttery croissants, rich tarts, and fresh seasonal treats.

Later this summer, they plan to expand their offerings to include savory sandwiches and rotating seasonal drinks.
