A French Bistro, Smash Burgers & Seafood Boils Set to Join the South Soundās Rising Culinary Hotspot

If you're in Tumwater or anywhere near the Craft District, get readyāthree brand-new dining experiences are on the way, and each one promises to add flavor (literally and figuratively) to the local food scene.
This once-sleepy corner of Tumwater has been quietly transforming into a food and beverage destination, and the latest restaurant announcements only add to the momentum.
Whatās Coming to the Craft District?
According to recent reports, the Craft District will soon welcome:
š«š· A French Bistro
š A Smash Burger Spot
š A Coastal-Style Seafood Restaurant
While all the names havenāt been officially confirmed, each eatery will offer a distinct dining concept ranging from upscale, European-inspired fare to more casual, comfort-driven menus.
Bar Cāest Lāeau, which translates to āItās the Waterā in French, is the first of these new additions to be confirmed. It will be led by Chef Joe Rumberger, who also operates Bastard Pies in the same space. The duo behind the bistroāRumberger and co-owner Laura Hallettāwere inspired by the popularity of their Belgian-style pop-up and decided to take the leap when the former Finnriver Cidery taproom became available.
Bar Cāest Lāeau is set to open this June in the heart of the district.
