🍽️ New Dining Options Coming to Tumwater’s Craft District

A French Bistro, Smash Burgers & Seafood Boils

A French Bistro, Smash Burgers & Seafood Boils Set to Join the South Sound’s Rising Culinary Hotspot

If you're in Tumwater or anywhere near the Craft District, get ready—three brand-new dining experiences are on the way, and each one promises to add flavor (literally and figuratively) to the local food scene.

This once-sleepy corner of Tumwater has been quietly transforming into a food and beverage destination, and the latest restaurant announcements only add to the momentum.

What’s Coming to the Craft District?

According to recent reports, the Craft District will soon welcome:

  • 🇫🇷 A French Bistro

  • 🍔 A Smash Burger Spot

  • 🐟 A Coastal-Style Seafood Restaurant

While all the names haven’t been officially confirmed, each eatery will offer a distinct dining concept ranging from upscale, European-inspired fare to more casual, comfort-driven menus.

Bar C’est L’eau, which translates to “It’s the Water” in French, is the first of these new additions to be confirmed. It will be led by Chef Joe Rumberger, who also operates Bastard Pies in the same space. The duo behind the bistro—Rumberger and co-owner Laura Hallett—were inspired by the popularity of their Belgian-style pop-up and decided to take the leap when the former Finnriver Cidery taproom became available.

Bar C’est L’eau is set to open this June in the heart of the district.

Why This Matters

This isn’t just about new places to grab a bite—it’s a sign of Tumwater’s growth and identity shift.

Here’s why this expansion is a big deal:

🍷 Culinary Diversity: Residents and visitors alike will soon have access to a wider range of food experiences without leaving the South Sound.

💼 Local Economy Boost: More restaurants mean more jobs, more foot traffic, and more spending at nearby businesses.

🌆 Urban Evolution: The Craft District is quickly becoming known as a go-to spot for artisan food, craft beverages, and now elevated dining.
