While Chicory has officially closed its doors, the story isn’t ending there. The same ownership team is preparing to launch a brand-new concept called Gold Standard, set to open on Capitol Way North.
It’s a pivot, but not a departure.
🍗 A More Accessible Concept
Unlike Chicory’s full-service, fine-dining approach, Gold Standard will lean into counter-service comfort food with a focus on approachability and consistency.
The menu is expected to center around:
Fried chicken
Sandwiches
Fresh-baked biscuits
Beignets
Seasonal vegetable dishes
A small but intentional pastry program
The goal is to create something that works for regular, everyday visits — whether it’s lunch, a quick dinner, or a casual stop-in.
🍽️ Keeping the Creative Spirit Alive
Even though the day-to-day format will be more casual, the team isn’t leaving behind its culinary creativity.
Ownership has shared that occasional supper club-style events could return — offering opportunities to revisit the refined, experimental dishes that Chicory became known for.
So while the new concept shifts toward accessibility, there will still be room for elevated, curated experiences.
