New Culinary Co-Op Coming to Downtown Olympia


Olympiaās food scene is getting a major upgrade with the upcoming debut of Altitude 15, a first-of-its-kind culinary cooperative in the heart of downtown. Located just blocks from Capitol Lake, this food hall-style venue is more than a dining destinationāitās a hub for local flavor, collaboration, and community events.
With four distinct food and beverage concepts under one roof, Altitude 15 is reimagining how we eat, gather, and support local entrepreneurs.
š§āš³ What Makes Altitude 15 Different?

Unlike traditional food courts or markets, Altitude 15 was designed with community and flexibility in mind. Here's what sets it apart:
š Open Design Concept
There are no walls separating the businessesāyou and your group can each grab food from different vendors and sit together in a shared dining area or on the covered outdoor patio.
Vendors share a massive prep kitchen, walk-in fridges, dishwashing area, and a state-of-the-art Class 1 hood system. Each vendor gets a dedicated stall and prep space, making it an affordable option for new chefs and food truck owners looking to go brick-and-mortar.
š§± Locally Built, Owner-Funded
This isnāt a corporate-backed development. The owners are doing much of the work themselvesāinstalling equipment, handling permits, and partnering with local artists and vendors. That grassroots energy shows in every detail.
"Itās taking longer than expected, but weāre doing it ourselves. We want to build something that truly belongs to Olympia,ā said the owner on Reddit. āWeāre in it for the long haul."

One of the first to sign on is Bite Me Catering, which has committed to operating the Atlas Restaurant inside Altitude 15. Expect inventive menus, collaborative pop-ups, and catered events hosted in the multi-use space.
